My couple in Glen Ellyn, who I have worked for as a personal chef for the last year or so, recently decided to try the Whole30 program. They both are semi-retired, but have better things to do than spending lots of time in the kitchen, so that’s why they hired a personal chef! When they decided to go on the Whole30 plan, I helped them by stocking up their refrigerator for this week’s meals. No snacking on this program, but I think they will feel satisfied and healthy! I made Roasted Balsamic Mustard Chicken, Golumpki with Cauliflower Rice, instead of the traditional rice, Stuffed Poblano Peppers, Zuppa Toscana and Whole30 Chili.  I also made a chicken salad that they can pick on for lunch when they are home. The Zuppa Toscana seems to be everyone’s favorite lately. It is a very satisfying soup with Italian sausage, bacon, coconut milk. You can make it spicy, by adding hot pepper flakes. Nice and creamy, but not rich! This couple will have an easy week with their refrigerator stocked up, making it easy for them to eat well!
